When I shop for really expensive players, I almost only see SGs and Cs with super high salaries... does this mean that they are more essential to the team, or just that they naturally have bigger salaries? Would it be a better strategy to get say a less expensive but top notch SF who will contribute to the team just as much?

I think it has a lot to do with guys with only the major few skills pumped as much as are in those positions.
C would have high ID, IS, Rb and SB and nothing else would have huge salaries
Same with SG with high OD, JS and JR.

PF, PG and even more so SF need to have more balanced skills to be listed at those positions.
And a more balanced build means a lower salary.

but he'll cost you a lot more
it evens up in the end

Not really. The balanced players are almost always better.

If you hold onto him for long enough, it may even financially be much better than buying an expensive SG with boosted primaries because you save so much on salary each week.
