when you're training jump shooting, which only allows you to train two players at minimum (wingmen, guards, forwards), is this just as efficient as training another area in only one position?

no - training one position is the best way to develop ur player skills. Training two positions is less efficient, but u develop up to six player instead of three.

For teams that single position train, they will train JS when their single position training is "busted" ie a guy gets hurt or fouls out or the cm makes a bizarre substitution. Most make backup plans to do that.

You can check current estimates for every training from the Training Speed Analysis thread:
(78242.1)

Total training for your team will be higher in two position training than in one position training. So it depends what you want, train 3 players as fast as possible or more players slower.

This is only true if you are getting 6 players 48 minutes, which is hard to do if you want to be competitive. It is much easier to get 3 players 48 minutes and single position train. I think the total training is greater single position training 3 players than 2 position training 5 players.

I really depends on how you want to develop your team, at least this is how I see it. I have just recently switched from 1 position training to 2 position training.

1 position training I tend to like more in a market of declining transfer prices. When you train 2 pos. then the skill increases might be offset be lower prices. 1-pos training will give you a player that you can sell with a profit. However, the players you dont train will decline in value.

Apart from this I find it easier to have the minutes distribution close to optimal for 2-position training. I usually have no problem having 5 trainees with 48 minutes and one 30+. In 1-pos training I often ended up with 2 48 minutes and 1 30+. If this is the case then 2 position training is a lot more efficient.

2-position training will give you more depth on your roster, and will keep salary cost a bit lower as well.

I also find that it is easier to train one player out of position in a 2-pos. training regimen.

And finally it is easier to fit the 2-position training skills into you training (eg. JR)
